Baked Grapefruit with Maple Collagen Yogurt

Beets are bright, earthy, and chock-full of nutrients. Not only are these vibrant root veggies a great source of fiber, but they also contain Potassium, Vitamin C, Vitamin B-6, Iron, and Magnesium, making them a great choice for these winter months through cold and flu season!
Beets are generally roasted, picked, or boiled and eaten in salads. It might sound strange to blend up beets in your morning smoothie, but the subtle sweetness can add a nice touch to the flavor. Plus, the nutritional benefits are amazing, and (if we’re totally honest) that color is great for the ‘gram! Beets alone can help lower blood pressure, boost your health with antioxidants, increase endurance (due to the nitrates they contain), and help support a healthy immune system.
This smoothie combines these health-boosting beet benefits with the balancing power of our Traditional Tonic Nourishing Collagen. Add to that the fact that the smoothie is delicious and, let’s face it, pretty – and we have a winter breakfast winner! Feel free to play with the recipe to boost the benefits you need. You could add flax, chia seeds, or ginger, depending on your smoothie goals.
1 small beet, peeled and cut into small chunks
1 & 1/4 cup almond milk
1 cup frozen strawberries
(blueberries and raspberries may also be included)
1 fresh or frozen banana
1/4 cup frozen pineapple
1 scoop Traditional Tonic Nourishing Collagen
1 tsp. chia seeds or flax
Optional: 1 tbsp honey for added sweetness
Combine all ingredients in a blender and blend until smooth
*Add ice if a colder smoothie is preferred
